Blue Berry Muffins
1/2 cup butter
1-1/4 cups sugar
2 eggs
1/2 cup milk
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons sugar for topping
1 pint blueberries
With mixer, cream together sugar and butter until fluffy. Add eggs one at a time. Mix until blended. Add dry ingredients, mixing with milk alternately. Wash berries and pat dry. Sprinkle with a little flour so berries won't sink to bottom of batter. Fold in berries. Grease muffin tins generously with butter. Fill -3/4 full. Sprinkle sugar on top of batter. Bake in 375-degree oven for 20 to 30 minutes. Allow to cool completely before removing from tins.

Veggie Fish Chowder
1 lb. firm-textured white fish, cut in 4 pieces
Freshly ground black pepper
2 medium carrots, thinly sliced
1 cup sugar snap peas, halved diagonally
1 Tbsp. olive oil
1 14-oz. can vegetable broth
2-1/4 cups water
1 4-oz. pkg. (or half a 7.2-oz. box. ) butter-and-herb-flavored mashed potatoes
Shaved Parmesan cheese
Directions
1. Season fish lightly with pepper. In 4-quart Dutch oven cook fish, carrots, and peas in hot oil over medium-high heat for 3 minutes.
2. Add broth and water; bring to boiling. Reduce heat. Simmer, covered, for 3 minutes or until fish flakes when tested with a fork.
3. Place mashed potatoes in small bowl. Carefully remove 1-1/4 cups hot broth from Dutch oven; stir broth into potatoes (mixture will be thick).
4. Divide mashed potato mixture among four bowls. Break fish in bite-size pieces. Ladle hot fish and vegetable mixture over potatoes. Season to taste with salt and pepper. Serve with Parmesan cheese.
Makes 4 servings.

Ginger Tea Recipe
2-inch piece of fresh ginger root
optional: honey and lemon slice
Peel the ginger root and slice it into thin slices. Bring the water to a boil in a saucepan. Once it is boiling, add the ginger. Cover it and reduce to a simmer for 15-20 minutes. Strain the tea. Add honey and lemon to taste.
Note: Keep in mind that if you are making ginger tea as a home remedy during cold and flu season, sweeteners are not recommended.

Stroganoff Roast
1- 3 or 3 and half pound chuck roast, defrosted
Flour
Salt, Fresh Ground Pepper
Garlic Powder
Olive Oil
Pam spray
1 Package Lipton Onion Soup Mix
1 can Cream of Mushroom Soup
Splash of Kitchen Bouquet
1 Package Cooked, Drained Egg Noodles (cook noodles during last few minutes of roast)
Directions:
Heat some extra virgin olive oil in a pan. While it's heating, coat the chuck roast in the flour, covering all sides. Generously sprinkle with salt, garlic powder, and fresh pepper. Once pan and oil are heated, sear the roast on all sides.
Spray the inside of the crockpot with some Pam, then add the seared roast. Sprinkle the entire package of (dry) Lipton Onion Soup Mix over the roast.
In the drippings from the roast still in the pan, add the can of mushroom soup and stir until all the fond is off the bottom of the pan. Pour over the top of the roast.
Cook on LOW for 8 - 10 hours. Remove roast from slow cooker (be careful, it's going to fall apart) and pour the gravy into a pan. Heat over medium high heat and use whatever thickener you normally use to make gravy (I make mine with cold water/corn starch). Stir in a splash of Kitchen Bouquet.
Pour noodles into a serving platter, then the roast rests on that, then pour the gravy over all. You can dress it up with a little fresh parsley, if desired.
Serve with warm bread and vegetable if desired. You can also add an additional can of mushrooms to the mushroom soup if your family really likes mushrooms.
Spicy Orange Chicken
2 oranges
1 tablespoon cooking oil
2 10-ounce packages baby spinach
1 tablespoon reduced-sodium soy sauce
1 teaspoon honey
1 teaspoon grated fresh ginger
1/2 teaspoon cornstarch
1/8 to 1/4 teaspoon crushed red pepper
1 pound skinless, boneless chicken breast strips
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 cloves garlic, minced
Directions:
1. Remove peel and white membrane from 1 of the oranges. Section orange; set aside. Squeeze enough juice from the remaining orange to measure 1/3 cup; set aside. In a 4-quart Dutch oven, heat 1 teaspoon of the oil over medium heat. Add spinach; cover and cook for 4 to 5 minutes or just until slightly wilted, stirring occasionally. Drain and transfer to 4 serving dishes or a serving platter. Cover and keep warm.
2. Meanwhile, in a small bowl, combine the 1/3 cup orange juice, the soy sauce, honey, ginger, cornstarch, and crushed red pepper. Set aside.
3. Sprinkle chicken with salt and black pepper. Wipe out Dutch oven with a paper towel. In Dutch oven, heat the remaining 2 teaspoons oil over medium-high heat. Add garlic; cook and stir for 30 seconds. Add chicken; cook and stir for 2 to 3 minutes or until chicken is no longer pink. Stir orange juice mixture; add to chicken in Dutch oven. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more.
4. To serve, arrange orange sections on top of spinach. Spoon chicken mixture over oranges and spinach. Makes 4 servings.

Spinach Orzo Salad
1 (16 oz.) pkg. uncooked orzo pasta
1 (10 oz.) pkg. baby spinach leaves, finely chopped
1/2 lb. crumbled feta cheese
1/2 red onion, finely chopped
3/4 cup pine nuts
1/2 tsp. dried basil
1/4 tsp. ground white pepper
1/2 cup olive oil
1/2 cup balsamic vinegar
Directions:
Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water. Transfer to a large bowl and stir in spinach, feta, onion, pine nuts, basil and white pepper. Toss with olive oil and balsamic vinegar; refrigerate and serve cold.

Cajun Fish Recipe
1 tablespoon vegetable oil
1 small green pepper, diced (about 2/3 cup)
1/2 teaspoon dried oregano leaves, crushed
1 can (10 3/4 ounces) Campbell's? Condensed Tomato Soup
1/3 cup water
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
1/8 teaspoon ground red pepper
4 fresh or thawed frozen fish fillets (cod, haddock or halibut) (about 1 pound)
Hot cooked rice, cooked without salt
* Heat the oil in a 10-inch skillet over medium heat. Add the green pepper and oregano and cook until the green pepper is tender-crisp, stirring often.
* Stir the soup, water, garlic powder, black pepper and red pepper in the skillet and heat to a boil. Add the fish to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the fish flakes easily when tested with a fork. Serve the fish and sauce with the rice.
