Cajun Fish Recipe

Cajun Fish

1 tablespoon vegetable oil
1 small green pepper, diced (about 2/3 cup)
1/2 teaspoon dried oregano leaves, crushed
1 can (10 3/4 ounces) Campbell's? Condensed Tomato Soup
1/3 cup water
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
1/8 teaspoon ground red pepper
4 fresh or thawed frozen fish fillets (cod, haddock or halibut) (about 1 pound)
Hot cooked rice, cooked without salt

* Heat the oil in a 10-inch skillet over medium heat. Add the green pepper and oregano and cook until the green pepper is tender-crisp, stirring often.
* Stir the soup, water, garlic powder, black pepper and red pepper in the skillet and heat to a boil. Add the fish to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the fish flakes easily when tested with a fork. Serve the fish and sauce with the rice.

Rasmussen Classes

So far I'm loving my classes at Rasmussen. I was hoping for a bit more interaction between the other students and the teachers, but overall I'm not too disappointed. The one thing that is really surprising is the lack of any kind of lectures at all. You simply read the chapters, make a few discussion posts, and a written assignment. If the would make the whole courses assignments available at the beginning I'm sure I'd already have it all done. Just need to post it when its due. I thought for sure they would at least have some podcasts or something to go along with each lesson. Oh well, it's fairly easy and I'm getting all A's so I guess I can't complain that much. I am concerned about a team research paper that I have to work on starting in a few weeks. I hate team projects in school.

Another Monday Morning....

It's another Monday morning and unfortunately I'm already at work. I came in at 4:30 today to get started on a monthly project I have, only to discover it's not ready for me yet. I'm not impressed with this at all. As it is I'm going to have to work a ton of overtime this week to get it out on time, but now it's looking like I'll have to be here this weekend too. This sucks!!! If I had known it wouldn't be ready for me then I would've stayed in bed!
